TASTING NOTES

Intense straw yellow color with golden reflections. On the nose, intense and persistent notes of syrup in perfect balance with the toast of the wood, a lactic point and hints of brioche. In the mouth we find very candied fruit, with an intense but elegant toast. Wide, full-bodied wine with a marked acidity that gives it a fresh and persistent finish. It invites to be paired with cream cheeses and also with the pasta au gratin with béchamel sauce. Perfect companion to ratatouille and white meat dishes such as fricandó.

CHARACTERISTICS

The climate is continental Mediterranean, with cold and dry winters and hot summers, sweetened by the sea wind (the marinade) in the afternoons and which cools the nights, especially during the ripening period. Rainfall is concentrated in autumn and spring (350-450 mm per year). The 2018 vintage was characterized by being very rainy (625 mm). This forced us to act often the vineyard to ensure quality. The good weather during the harvest allowed us to harvest in optimal conditions, and with balanced maturity.

Elaboration

We harvest the grapes manually and press them with the whole grain and the rapa. Fermentation at a controlled temperature between 15 and 17oC in American (75%) and French (25%) wooden barrels, with a percentage of new wood of 25%. Aging is carried out on the lees of the wine and, taking advantage of the effect they generate, we carry out a weekly battonage during the 3-4 months of aging to increase the volume of the mouth and seek a finer and more elegant integration of the wood. to you.
