TASTING NOTES
Very fine and elegant on the nose, with aromas of vanilla, cream and pastries and a fresh hint of fennel, white fruit and citrus. In the mouth it is fresh and sweet, round and balanced, with a marked acidity and a long and refreshing aftertaste.
CHARACTERISTICS
Xarel·lo and Chardonnay.Varieties from the Can Gambús vineyard, in the Sabadell Agricultural Park. These vineyards are part of the micro-projects that we are developing, year after year, from the Masia Can Calopa, weaving complicities with the territory and sharing experiences and knowledge.
Elaboration
We harvest the grapes manually in 10-kilo boxes and press them with the whole grain and the turnip. We ferment the Chardonnay with new French oak barrels and the Xarel·lo in 500 liter barrels to respect the varietal character of the grapes and achieve a perfect balance in the contribution of the wood. The aging is done on the own lees of the wine and, taking advantage of the effect they generate, we perform a weekly battonage during the 4-5 months that the aging lasts in order to increase the volume in the mouth and seek a finer and more elegant integration. from wood to wine.
