TASTING NOTES
Pale yellow color with greenish hues. The nose is frank and clean, with aromas of citrus and stone fruit (apricot, peach) where the spicy tones of white pepper stand out. In the mouth it is a very fresh wine with a marked acidity. Citrus, grapefruit and apricot aromas return with a long and refreshing finish.
CHARACTERISTICS
The Natural Park of Sant Llorenç del Munt i l'Obac is part of the pre-coastal mountain range, with a Mediterranean climate, characterized by mild winters, dry and hot summers, moderate thermal oscillation and seasonal rainfall as a whole, which is scarce and strongly irregular.
Elaboration
Grapes selected from the vineyard and harvested manually in boxes of less than 12 kilos. The whole grape is cold pressed (5-6ºC), with a gentle pressing to extract the flower must. Fermentation at very low temperature (12-13ºC) for 3 weeks with selected cryofermentative yeasts. Rest in stainless steel tank for 6 months until bottling.
